Ingredients

2 Tbsp vegetable oil
1 Tbsp butter
1½ Tbsp Better Than Bouillon® Seasoned Vegetable Base
3 lbs sweet potatoes, peeled and cut into ½ inch pieces
½ tsp ground nutmeg
½ cup pure maple syrup
⅓ cup firmly packed dark brown sugar (topping)

Directions

    Preheat an oven to 350°F.

    In a large preferably cast iron or ovenproof skillet, heat over medium heat.

    Add oil, butter and Vegetable Base, cook and stir about 2 minutes.

    Increase heat to medium-high, add potato pieces and sprinkle with nutmeg, cook and stir about 10 minutes.

    Reduce heat to medium, pour maple syrup over potatoes; cook and stir about 5 minutes.

    Remove from heat, top with brown sugar, place in oven and bake until fork tender, about 10 - 15 minutes
