Parmesan Zucchini Fries

These yummy baked zucchini fries are breaded and served with marinara sauce for dipping – they make a perfect vegetarian appetizer that everyone will love.

Ingredients

2 eggs
2 Tbsp Better Than Bouillon® Seasoned Vegetable Base
¾ cup bread crumbs
1 cup grated Parmesan cheese, divided
3 zucchini, halved lengthwise and crosswise into quarters
¾ cup all-purpose flour
¼ cup olive oil
2 cups prepared marinara sauce, heated

    Preheat oven to 425˚F. In shallow bowl, beat together eggs, 2 tbsp water and Vegetable Base. In separate bowl, mix together bread crumbs and 3/4 cup Parmesan.

    Dredge zucchini in flour; dip into egg mixture and coat in bread crumb mixture. Arrange in single layer on parchment paper–lined baking sheet; drizzle with oil.

    Bake, turning once, for 18 to 20 minutes or until golden brown and crispy.

    Sprinkle with remaining Parmesan cheese. Serve with marinara sauce for dipping.

Tip: These fries are also delicious served with tzatziki sauce.
