Mushroom & Farro Pilaf

Cooked in a multi-function cooker, this whole grain pilaf with a medley of mushrooms makes a delicious side dish to accompany almost any main dish. It’s great with grilled steak, roasted chicken or even broiled fish.

Ingredients

3 Tbsp olive oil
½ lb sliced mixed mushrooms
1 onion, diced
2 cloves garlic, minced
1 Tbsp finely chopped fresh thyme
¼ tsp pepper
1½ cups farro
2 Tbsp Better Than Bouillon® Roasted Beef Base
⅓ cup finely grated Parmesan cheese
2 Tbsp finely chopped fresh chives

Directions

    Set multi-function cooker to Sauté setting over High heat. Heat oil; cook mushrooms, onion, garlic, thyme and pepper for about 5 minutes or until mushrooms start to brown.

    Stir in farro; cook for 30 seconds. Pour in 2 cups water and Roasted Beef Base.

    Cover with lid; lock and seal in position. Pressure-cook on High for 20 minutes. Turn off heat and manually release pressure according to manufacturer’s instructions. Carefully remove lid.

    Stir in Parmesan and chives.

Tip: For medley of mushrooms, try a mix of cremini, shiitake, oyster, portobello and/or chanterelle mushrooms.
