Italian Herb and Feta–Stuffed Meatballs

Ingredients

1 lb lean ground beef
⅓ cup Italian bread crumbs
1 egg, beaten
3 tbsp Better Than Bouillon® Italian Herb Base
¼ cup olive oil, divided
4 oz block-style feta cheese, cut into 1/2-inch cubes
4 cloves garlic, sliced
1 jar (24 oz) tomato purée (passata)

    Preheat oven to 425°F.

    In medium bowl, stir together beef, bread crumbs, egg, 2 Tbsp Culinary Collection Italian Herb and 2 Tbsp oil. Scoop into 2-Tbsp balls. Press 1 cube of feta into center of each ball, then pinch to seal and enclose cheese. Arrange on parchment paper–lined baking sheet.

    Bake for 12 to 15 or until golden brown and cooked through.

    Meanwhile, in large skillet set over medium heat, heat remaining oil. Cook garlic and remaining 1 Tbsp Culinary Collection Italian Herb, stirring frequently, for 1 minute or until fragrant. Stir in tomato purée; bring to a boil. Reduce heat to medium-low and cook, stirring occasionally, for 10 to 15 minutes or until flavors are married.

    Stir meatballs into sauce. Cook, stirring occasionally, for 3 to 5 minutes or until well-coated in sauce.
