Hearty Minestrone Soup

1 lb | cooked Italian-style ground sausage |
1 Tbsp | olive oil |
1 | small yellow onion, diced |
2 | carrots, peeled, thinly sliced |
2 | celery ribs, thinly sliced |
1 tsp | minced garlic |
6 cups | water |
2½ Tbsp | Better Than Bouillon® Roasted Beef Base |
1 can | (28-ounce) diced tomatoes, undrained |
1 can | (5.5-ounce) tomato juice |
2 tsp | dried basil leaves |
2 tsp | dried oregano leaves |
¼ tsp | coarse black pepper |
1 | bay leaf |
1 bag | (12-ounce) frozen green beans |
1 can | (14.5-ounce) great northern beans, drained and rinsed |
Directions
Cook Italian sausage until done (about 10 min).
In a soup pot with oil over medium-high heat, add onion, carrots, celery and garlic; cook for 3 minutes.
Add water, Roasted Beef Base, diced tomatoes, and tomato juice; bring to a boil, stirring occasionally.
Reduce heat to medium-low, add basil, oregano, black pepper, bay leaf, green beans and sausage. Simmer for 15 minutes, stirring occasionally.
Add beans and heat through, about 5 minutes. Remove bay leaf before serving.
