Grilled Sofrito-Mayo Marinated Chicken with Olive Cilantro

Using mayonnaise as a base for marinating makes this grilled chicken extra moist and juicy. Olive cilantro salsa adds depth of flavor.

Ingredients

Grilled Chicken:

⅓ cup mayonnaise
1 tbsp Better Than Bouillon® Sofrito Base
4 boneless skinless chicken breasts (each about 6 oz)

Olive Cilantro Salsa:

½ cup halved pitted green olives
¼ cup finely chopped fresh cilantro
2 green onions, thinly sliced
1 jalapeño pepper, diced
¼ cup lime juice

    In large bowl, whisk together mayonnaise and Culinary Collection Sofrito. Add chicken and toss to coat. Let marinate in airtight container in refrigerator for 2 to 4 hours.

    Preheat grill to medium-high heat; grease grates well.

    Remove chicken from marinade; shake off excess (discard marinade).

    Grill, flipping once, for 16 to 20 minutes or until grilled-marked, chicken is cooked through and instant-read thermometer registers 165˚F when inserted into thickest part of chicken. Let rest for 10 minutes before serving.

    Meanwhile, in medium bowl, stir together olives, cilantro, green onions, jalapeño, and lime juice.
