Opa! These simple lemon-roasted Greek potatoes are loaded with garlic and oregano for a very tasty side dish.

¼ cup | olive oil |
2 Tbsp | lemon juice |
2 Tbsp | Better Than Bouillon® Roasted Chicken Base |
4 cloves | garlic, minced |
1 tsp | dried oregano |
2 lb | Yukon Gold Potatoes, cut into 1-inch wedges |
¼ tsp | pepper |
Directions
Preheat oven to 425°F. In large bowl, whisk together oil, lemon juice, Roasted Chicken Base, 2 Tbsp water, garlic, oregano and pepper. Add potatoes; toss well.
Transfer to parchment paper–lined baking sheet. Bake for 20 to 25 minutes or until golden brown and tender.
Substitute dried crumbled rosemary for oregano if desired. For an extra-lemony kick, sprinkle with lemon zest before serving.
