Ingredients
Quantity | Ingredient |
---|---|
2½ lbs | golden potatoes unpeeled, scrubbed, cut into large similar sized pieces |
1 tsp | Better Than Bouillon® Vegetarian No Chicken Base |
¾ cup | low-fat sour cream |
½ tsp | freshly ground nutmeg |
½ tsp | organic garlic powder |
½ cup | (1 stick) butter, cut into small pieces (set aside) |
1 Tbsp | finely chopped chives (set aside) |
salt | |
white pepper |
Directions
In a large pot, add potatoes and fill pot with cold water until potatoes are covered. Place over medium-high heat and bring to a boil. Reduce heat to a simmer and cook until potatoes are fork tender, about 20 minutes.
In a small bowl, add No Chicken Base, sour cream, nutmeg and garlic powder. Stir to combine and set aside.
Remove potatoes from heat and drain in a colander; place back in pot.
Add butter pieces. Using a handheld potato masher, smash potatoes just until butter is incorporated.
Add sour cream mixture and smash until combined. Do not over smash potatoes.
Add chives; season to taste with salt and pepper; stir to combine.
