Ingredients

Quantity Ingredient
2½ lbs golden potatoes unpeeled, scrubbed, cut into large similar sized pieces
1 tsp Better Than Bouillon® Vegetarian No Chicken Base
¾ cup low-fat sour cream
½ tsp freshly ground nutmeg
½ tsp organic garlic powder
½ cup (1 stick) butter, cut into small pieces (set aside)
1 Tbsp finely chopped chives (set aside)
salt
white pepper

Directions

  • 1

In a large pot, add potatoes and fill pot with cold water until potatoes are covered. Place over medium-high heat and bring to a boil. Reduce heat to a simmer and cook until potatoes are fork tender, about 20 minutes.

  • 2

In a small bowl, add No Chicken Base, sour cream, nutmeg and garlic powder. Stir to combine and set aside.

  • 3

Remove potatoes from heat and drain in a colander; place back in pot.

  • 4

Add butter pieces. Using a handheld potato masher, smash potatoes just until butter is incorporated.

  • 5

Add sour cream mixture and smash until combined. Do not over smash potatoes.

  • 6

Add chives; season to taste with salt and pepper; stir to combine.
