This healthy and colorful veggie side dish makes a pretty side dish for turkey dinner, but it’s so delicious and easy to make that you can serve it any night of the week.

Ingredients

2 tbsp unsalted butter
½ cup diced ham
½ cup diced red pepper
4 green onions, thinly sliced
3 cups frozen corn
1 cup shelled edamame
4 tsp Better Than Bouillon® Roasted Turkey Base
4 cups baby spinach
2 tbsp finely chopped fresh parsley

Directions

    Melt butter in large skillet set over medium-high heat. Cook ham, red pepper and green onions for 3 to 5 minutes or until slightly softened.

    Stir in corn, edamame, Roasted Turkey Base and 1/4 cup water; bring to boil. Cook for 3 to 5 minutes or until vegetables are tender.

    Stir in spinach. Cook for 1 to 2 minutes or until slightly wilted. Stir in parsley.

Tip: Substitute frozen lima beans or peas for edamame if desired.
