Caramelized Onion and Goat Cheese Burgers

These meaty grilled burgers are topped with sweet caramelized onions and goat cheese for a winning gourmet combination that’s simple to prepare.

2 tbsp butter
3 large onions, thinly sliced
2 tbsp Better Than Bouillon® Roasted Beef Base
2 lb ground beef
2 tsp pepper
8 burger buns, split
2 cups arugula
1 tbsp olive oil
½ cup crumbled goat cheese

Directions

    Melt butter in large heavy-bottom pan set over medium heat; cook onions and 2 tsp beef base for 5 to 8 minutes or until onions are slightly softened. Reduce heat to medium-low; cook, stirring occasionally, for 15 to 20 minutes or until onions are golden brown and caramelized.

    Meanwhile, mix together ground beef, remaining beef base and pepper. Divide into 8 portions; shape into 1/2-inch thick patties.

    Preheat grill to medium-high heat; grease grate well. Grill patties for 12 to 15 minutes or until instant-read thermometer inserted into center reads 160°F. Grill buns for 30 to 60 seconds or until lightly toasted.

    In bowl, toss arugula with olive oil. Serve burgers in buns with caramelized onions, arugula and goat cheese.

Tip: Substitute crumbled blue cheese, or sliced Swiss or aged Cheddar for goat cheese if desired.
