2 Tbsp | Better Than Bouillon® Roasted Chicken Base |
2 lbs | red potatoes, peeled and cut into ¼ inch chunks |
2 Tbsp | freshly chopped parsley |
1 Tbsp | minced garlic |
½ tsp | black pepper |
1 tsp | grainy mustard |
2 Tbsp | red wine vinegar |
¼ cup | olive oil |
½ cup | diced green onions |
Directions
Add the water, 1 tablespoon Chicken Base, and potatoes to a large stock pot. Bring the water to a boil, reduce the heat and simmer for 10 minutes.
Add the remaining tablespoon of Base, parsley, garlic, pepper, mustard, and red wine vinegar to a small bowl. Slowly whisk in the olive oil.
Remove the potatoes from the heat and drain in a colander. Add the potatoes back to the pot and drizzle with the vinaigrette. Add the green onions and toss to combine. Serve immediately.
