BBQ Grilled Burgers with Smoky Chipotle Butter

Stuffed with a chipotle-herb butter, these grilled burgers are incredibly juicy and flavorful—definitely not your plain-old everyday barbecued patties.

Ingredients

Chipotle Butter:

½ cup unsalted butter
2 tbsp Better Than Bouillon® Smoky Chipotle Base
2 tbsp finely chopped fresh chives
1 clove garlic, minced
½ tsp dried oregano

Grilled Burgers:

1½ lbs medium ground beef
⅓ cup barbecue sauce
4 slices Cheddar cheese
4 brioche buns, split
¼ cup mayonnaise
1 cup arugula
4 slices tomato
4 rounds red onion
12 slices pickles

Directions for Chipotle Butter:

    In small bowl, stir together butter, Culinary Collection Smoky Chipotle, chives, garlic and oregano until blended.

    Using spatula, spread butter mixture into log shape and roll tightly in plastic wrap, twisting ends to seal. Freeze for 15 to 30 minutes or until firm. (Alternatively, Refrigerate for 1 to 2 hours)

Directions for Grilled Burgers:

    Slice four 1/2-inch coins of chipotle butter.

    Divide ground beef into 4 portions. Roll each portion into a ball and press a coin of butter into center of each. Pinch meat together to enclose butter. Shape each ball into 1/2-inch-thick patty.

    Preheat grill to medium-high heat; grease grates well. In small skillet set over medium heat, melt remaining chipotle butter; cover to keep warm.

    Grill burgers, flipping once, for 10 minutes. Brush burgers with barbecue sauce. Grill for 2 to 3 minutes or until burgers are cooked through and instant-read thermometer registers 160°F when inserted into burger. Top burgers with Cheddar and grill for 30 to 60 seconds or until cheese starts to melt.

    Meanwhile, grill brioche buns for 30 to 60 seconds or until lightly toasted. Brush buns with melted chipotle butter.

    Serve burgers in toasted buttered buns with mayonnaise, arugula, tomato, onion and pickle.

Tip: Substitute pickle slices with pickled jalapeño pepper slices if desired.
