1 bag | (12 oz) coleslaw mix |
1½ cups | chopped cooked chicken (or rotisserie chicken) |
½ | cucumber, sliced |
⅓ cup | smooth peanut butter |
2 Tbsp | Better Than Bouillon® Roasted Chicken Base |
2 Tbsp | soy sauce |
2 Tbsp | rice wine vinegar |
2 Tbsp | chili paste |
1 Tbsp | minced fresh ginger root |
1 Tbsp | brown sugar |
4 tsp | sesame oil |
4 | green onions, thinly sliced |
4 tsp | sesame seeds |
Directions
Divide coleslaw among 4 plates. Top with chicken and cucumber.
Combine peanut butter, 1/4 cup water, Roasted Chicken Base, soy sauce, rice wine vinegar, chili paste, ginger, brown sugar and sesame oil in small saucepan set over medium heat. Cook, stirring, for 3 to 5 minutes or until smooth and boiling. Boil for 1 minute.
Drizzle warm dressing over salad. Sprinkle with green onions and sesame seeds.
Tips: For Bang Bang Turkey, use roast turkey and Better Than BouillonĀ® Roasted Turkey Base. Substitute cooked jasmine or basmati rice for coleslaw mix if desired.
