(9-ounce) packages fresh spinach, ends trimmed, rinsed and drained

Directions
  1. In a small bowl, add cream and Vegetable Base, whisk to combine and set aside.
  2. In a large pot, add oil, butter and shallot. Cook and stir over medium-high heat until shallot is tender.
  3. Add spinach; cook and stir until done and the liquid has evaporated.
  4. Add cream-base mixture and nutmeg. Stir to combine and heat thoroughly. Season to taste with salt and pepper.
Classic Creamed Spinach is a great side, or place freshly broiled fish on top of a serving of spinach for a signature entrée.
