Directions
  1. Preheat the grill to 450 °F.
  2. Rub the racks of lamb with olive oil and place directly onto the grill. Grill for 2 - 3 minutes per side. Remove the lamb from the grill and let rest for 5 minutes. Lower the grill to 400 °F.
  3. Mix the Dijon mustard, parsley, garlic, rosemary, lemon juice, and thyme in a small mixing bowl.
  4. Carefully rub the lamb with the marinade. Place the lamb back onto the grill and grill for 5 minutes. Turn the racks and grill for 10 minutes more, turn the racks once more and grill for 8 - 10 minutes more or until the internal temperature is 125 °F.
  5. Let the lamb rest for 10 minutes before slicing into individual chops. Serve immediately
