Directions
  1. Add the oil to a large sauté pan over medium high heat. Add the chicken and sauté for 2 - 3 minutes. Add the sausage and onion and sauté for 3 - 4 minutes. Add the garlic and sauté for 30 seconds.
  2. Add the chicken base, oregano, spinach leaves and diced tomatoes. Sauté until the spinach is wilted, 3 - 4 minutes, stirring constantly.
  3. Remove the pan from the heat and serve immediately over the cooked rice.
